Quince Jelly


The other day I made quince jelly - it looked so lovely when it was done - the prettiest peach color - I had to take a picture of my breakfast!
Quince jelly:
Cut up four or five quinces (leave the skin, but wipe the fuzz off) and cut out the seeds. Cover with water and boil for about an hour. Strain and then add the same amount of sugar as juice (I never measure, I just looked and guessed - but probably measure the cups of water / cups of sugar ratio. Add the juice of one lemon. Bring to a boil and cook 10 more minutes then pour into jam jars. Let set overnight.

I can't even remember the last time I made jelly. Probably in my early married years. *gulp* I'm getting ready to celebrate my 29th wedding anniversary, so probably 20 years ago. It looks marvelous Sam.

Rosie - I'm a dismal jam / jelly maker, but I keep on trying. Quince is pretty foolproof, lol.

Sam, Thanks for stopping by my blog...and thank you for such a lovely comment...Actually, you hit the nail on the head about "generational"-- I'm blogging the Louisiana stories because I've grown nieces who aren't interested in their legacy. They don't know now about the stories, but will know in a year...if they're ready for the stories, they're there...so, Im doubly appreciative for your comment...when they're ready they'll see others found them interesting and won't think of the stories as just interesting to me...I also blogged this reason...anyway, your quince jelly initially caught my eye...I'm going to try to make it...Thanks!!!
