If I know where I'm starting and know where I'm ending up, the rest is usually easy. My dad made delicious, eggy c...I adore crepes, Sam. My dad made delicious, eggy crepes almost every weekend when I was a kid (my mother couldn’t master them). He called them <I>cinnamon egg pancakes</I> and I didn’t realize they were crepes until I was older. He made them with vanilla and cinnamon and served them with butter and maple syrup.<BR/><BR/>I love to make them and have for years. I like then rich and eggy. My favorite way to eat them is either with fresh lemon syrup (sugar, lemon juice and rind, and butter) or with a squeeze of fresh lemon over the buttered crepes and then topped with powdered sugar. But I love them with most any topping.
